Forgive me foodies, for I have sinned. I drizzled coconut achiote oil on popcorn and I may never use butter again.
When the nice folks over at Tropical Traditions offered to send me some of their Coconut Oil I knew I was going to do something with annatto. If you're unfamiliar, annatto or achiote, is a seed used in Mexican, Caribbean, and Filipino cooking. It has a subtle nutty taste and it turns whatever it's added to orange.
Last night I made coconut achiote oil with the intention of making a Filipino rice, but when my husband came home with a box of pop corn I couldn't resist. I drizzled a little on it and let me tell you- I will never use butter on popcorn again. This is nothing short of sinful. Because the coconut oil isn't sweetened it works well with the annatto seeds and you end up with a nutty coconut oil.

You know what's even more awesome about this recipe? It's vegan friendly! Raise your hand if you're a vegan and have not thought of this before.
Coconut Achiote Oil
makes 4 tbsp
5 tbsp Coconut oil
1.5 tsp annatto seeds
In a small saucepan over medium heat melt the coconut oil. Once the oil is melted add the annatto seeds. Stir until oil starts to boil and remove from heat, about 3-4 minutes. Do not let the annatto seeds start to brown, if that happens, immediately remove from heat.
Let stand for 5 minutes and filter out annatto seeds.
Drizzle over popcorn or add it to some of your favorite dishes where you'd normally use butter or oil. The possibilities are deliciously endless!
Note: The oil will harden back into it's original solid state after it reaches 75 degrees, so put it in a dish that you can reheat to make liquid again. Please also be aware that when cooking with Annatto seeds they turn everything they touch yellow/orange. Be careful not to get it on your clothes or a countertop that will stain.
You can store this in your pantry with your other oils, it does not need to be refrigerated.

I love popcorn but being raw, can't get it! But I will definitely try your Coconut Annatto Oil, it has such healing powers and together are wonderful for healthy living! I use annatto in my spice mixes and coconut oil in so many other things, my favorite is a truffle that I make and Tobago spiced kale chips!
