Tea Infused Blueberry Rice Pudding


I've done something sort of crazy lately that is completely out of my character.

Two weeks ago I basically stopped drinking coffee.

It was right around then that I discovered Stash Tea. If you're like me and have been drinking supermarket brands your whole life, you've probably never thought much about the flavor. This tea is like discovering beef carpaccio when you're whole life you've thought burgers were the best way to eat beef.

My husband and I both love the Blueberry. Ok. We love all of them, but the Blueberry is amazing. I would probably drink it instead of water if I had an endless supply. I wanted to make something to do it justice and my friend Garrett suggested rice pudding. I'd never made it before, but was a little obsessed with a store in NYC that only served rice pudding. I thought I had a pretty good idea for what it should taste like. This is nice and creamy with a big blueberry flavor. I hope you like it.

Tea Infused Blueberry Rice Pudding
serves 8
45 minutes, plus 3 hr chill time

3 cups of water
1 cup sushi rice
2 cups whole milk
1/2 cup half & half
1tbsp cornstarch
1/3 cup brown sugar
1 tsp vanilla
1/2 pint blueberries


Cook the rice with 3 cups of water and 3 teabags as you would normally. Once rice is done, add milk, leaving the teabags in this mixture. Open your remaining tea bag and add the contents to this mixture. Cook for five minutes on medium heat, it will slightly thicken up. Add the cornstarch to your half and half and mix. Once lumps are gone add half and half to your rice. Remove the tea bags. Add vanilla, sugar, and blueberries and cook for 10 minutes on medium. Remove from heat, spoon pudding into a storage bowl and chill for at least three hours. Serve cold.

  1. The only tea I drink is mint tea! Don't have a favorite brand or anything. BUT I would love to win this because my husband is a big tea drinker and Stash tea is AWESOME according to him :)

    I don't have a favorite just yet.. I like to try new ones all the time, enjoying the most the fruity combinations.. Tea is way underestimated in my opinion..

  10. I'm an avid tea drinker, but with a new instant-coffee maker in our household, suddenly I feel like I've been cheating on tea with coffee instead! My favorite tea ever - is White Chocolate Mousse that I get from the Banff Tea Company - but my favorite Stash tea is Licorice Spice - it's perfect just as it is, sweet without being toooo sweet, flavourful, and reliably enjoyable. Yum! Consider this my entry!

  23. This is a wonderful idea. I infused ice cream with chai tea once, but haven't revisited the concept since. I'll have to change that soon...

    Favorite tea is either maple vanilla tea or jasmine. It's a toss-up!

  28. My absolutely favorite tea has to be Twinings Green Tea Mint. It's calming and delicately flavored, but deliciously fresh and invigorating as well. I love it with a drop of honey in the evening - the perfect end to any day!

  31. I grew up with a mother that drank 7 cups of black tea every day. I have to say although it's store bought, it was my childhood. Constant Comment tea is a staple in the pantry, but I love darjeeling as a special treat!

  33. Oh boy, I can only boil it down to three!
    • Madame Flavour's Green Tea infused with pear and jasmine is the best! I have about three cups a day and it's the only way I can get through school with a bright smile on my face
    • Arkadia's Vanilla Chai Tea is my favourite before bed, I put some milk in and heat it up on the stove, it's definitely a winter favourite
    • T2's French Earl Grey is a delicious twist on boring Earl Grey, even the tea bag is so pretty, with little flowers in them!

  44. Currently my favorite tea is a plum spice tea I found in a local grocery store here. I also have a thing for some mandarin orange green tea they have at work... but my go-to all time favorite is plain old peppermint tea. I could drink that all day long... and now am going to try replacing the water in a brownie recipe with peppermint tea because I've never thought to cook with tea ... thank you for the inspiration, Jessie.
