Vegan 'Glory' Pie

© 2012 Jessie Kaufman

Update: I've decided I like this better without the crust. I've been making the the filling, refrigerating it, and topping it with chopped almonds and toasted coconut. It's even more heavenly.

You know that song that Jay-Z wrote for his baby? This pie is my Blue Ivy.

Tonight I was looking through my Pinterest recipe board trying to find inspiration for something new and I saw this. If you're on Pinterest, I'm sure you've seen it a billion times. It's constantly getting repinned. And if you're anything like me you likely looked at the ingredients, said whoa, and kept clicking.

I'm gonna be your hero tonight.

Cajun Buffalo Mac-n-Cheese

I did something sacrilegious to one of my grandmother's recipes last night. My mother-in-law made a version of this Buffalo Chicken Dip a few Christmases ago and tonight I needed it. I needed it like I need Grey's Anatomy and a glass of wine on a Thursday night.

Cucumber Sparkling Water

© 2012 Jessie Kaufman

I first encountered this water in Brooklyn two years ago at the Food & Film Fest under the Brooklyn Bridge. I meant to write down the brand so I could buy some, but forgot about it likely because of the free beer tastings.

Anyway, so last week my husband's best friend was in town and invited us out to dinner with his fiancee. We ended up going to the Red Canary and lo and behold, the cucumber water was served.

Spinach Dip

Hey ya'll. I'm guest posting over at Not Rachael Ray today. She's one of my favorite blogger friends and I think you'll really enjoy her site. Her format is fun. She has her husband and toddler taste test all of her recipes and she tells you what they think.

I made a healthier version of Spinach Dip that I didn't feel guilty about serving or eating. I don't think I could even tell the difference. Go check it out and peruse some of Rachel's other recipes.

Michigan Salad & A Happy Birthday

© 2012 Jessie Kaufman

Today's post is a fun one. It's my friend Brandy's 30th birthday and a couple other bloggers and I are throwing her a Virtual Surprise Birthday Party. Brandy, like me is originally from the Midwest, and like me we've both lived in New York. I was there for almost six years and Brandy has been there since after high school. So it makes perfect sense that we were instant friends. For her birthday I invited some of her favorite bloggers to throw her a dinner party. We're each bringing a course. Click the links below to see what other bloggers brought. Visit Nutmeg Nanny here to peruse her recipes or wish her a happy birthday.
